Charlotte grew up in New York City sailing on her family's Seafarer 31'. At the age of six, she began sailing dinghies at her local yacht club. She became active in her yacht club's PHRF racing and crewed in regattas up to the national level. Charlotte further pursued her passion by teaching sailing every Summer in New York at Manhattan Sailing School and Hudson River Community Sailing, all while completing her studies in Psychology and Sociology at Hunter College.
Charlotte now lives and works full time as a captain in the BVI. She has 17 years of sailing instruction under her belt, over 6,000 nautical miles offshore delivering yachts, and both USCG and BVI Captain's licenses. In her spare time, she can be found island hopping, hiking, reading, racing in regattas around the Caribbean, throwing extravagant dinner parties, diving, and falling off surfboards.
Matt, a New Orleans native, was raised in a restaurant family. His family ran several restaurants throughout the French Quarter, all inspired by their immigration from Hong Kong. He took after his Grandmother and Uncles, spending time in the kitchen tasting anything that could, and some that he shouldn't.
After highschool Matt went on to pursue his own culinary path with ambition of cooking around the world. He took an apprenticeship in a small New Orleans creole cottage, Iris, learning the kitchen dance, one on one with the Chef. Honing his talents, he grew into bigger roles in bigger kitchens, learning from many, including Chef Susan Spicer in New Orleans and David Chang in New York, cooking everything from old world French baguettes to aerated cheese foam in mozzarella balloons. His passion for cooking has manifested itself into travels, journeys and lifetime friendships throughout the world.
If you were asked to close your eyes and picture the Mediterranean, what might you expect to see? Little coffee cups and terraced buildings with terra-cotta roofs; chic seaside towns and rocky beaches dotted with colorful parasols? If so, Sardinia and Corsica is going to surprise you. That Southern European-feel is present: both rustic Italian life in quiet port towns and the lavish resorts perched on cliffs overlooking the water coexist here. But the landscape is not what you expect from the Mediterranean—it more closely resembles the moon. On this seven-day trip, you will experience Sardinia's rich culture and it's surprising northeastern coast, which is rugged and wild. Further offshore, you'll explore hidden alcoves and climb the smaller, unearthly granite islands that jut out of the deep blue sea. Each day will include a few hours of sailing, allowing time for swimming, snorkeling, hiking, shopping or just relaxing. You'll anchor at a safe harbor for the night. The voyage will be led by a professional captain, hand-selected and trained by the Sailing Collective, who embodies the true nature of the modern explorer holding depth of cultural and practical knowledge of the region. Accompanying the captain is a private chef who is a trade professional, passionate about the culinary arts. Provisioning will be sourced locally and the cuisine during the voyage inspired by the regional flavors and techniques. Throughout the experience, there will also be opportunities to dine ashore at quality local restaurants to experience local culinary traditions.
